Hope this Newsletter finds you in good spirits! This week we have a lot of great events to share with you! Dive in and see what is happening around RoCo.

I hope everyone has their favorite game day dishes in mind! I love some game day wings, homemade ranch with a side of chips and dip! 🤤

Monday [2/3]: Join the Rutherford County Board of Commissioners meeting at 6pm to learn what initiatives are up for discussion. This is your chance to voice what matters most to our community.


Tuesday [2/4]: Don’t forget to sign up for Little League at Mooneyham Library from 6-8pm. Online registration will remain open until 2/15.


Wednesday [2/5]: For men who are interested in a Redemptive Community that is built around an intimate group of like-hearted men in Christ, join the Men’s Gathering at Hope House Coffee from 6:45-8:30am.


Thursday [2/6]: Discover the ancient practice of Tai Chi with Magi King and enhance your mind-body connection through inner focus and controlled movement at Dreaming Stone Arts and Ecology Center in Rutherfordton at 10am.


Friday [2/7]: Enjoy two family-friendly days full of fun, food, and local shopping with Ruff’ton Love Pre-Valentine’s Celebration beginning at 10am.


Saturday [2/8]: All veterans and their families can enjoy some company during breakfast. Gather, share war stories, and old vets are welcome to complain about how younger vets had it easy at MWSS 828 in Forest City from 9am-11am.


Sunday [2/9]: We may know which team we’re rooting for, but we have no clue who’s going to win Main Street Market’s Chili Cookoff. Watch the big game and help decide who has the best chili.

Heart of The Foothills still needs your help getting their new location up and running. Check out their Amazon Wishlist to be apart of their mission to save the animals of Rutherford County.

Help Ruff’ton Roots pull silage tarps, and prune berries and fruits.

Join Rutherford Outdoor Coalition on the Isothermal Community College (ICC) trail system for a rewarding weekend workday helping to restore the trail.

Forest City: Do you know a dedicated worker looking for a job? Chartwell Schools has an amazing opportunity M-F. Full-Time or Full-Time. No Experience is needed.

Spindale: Make a difference alongside a supportive team with Southern Clean Pros. M-F Must have a valid driver’s license. Experience is not required.

Recipe of The Week:

Bacon Chex Mix
Ingredients: 
15 oz bag Chex Mix Traditional Mix
1cup Toasted Pecan Halves
8 slices Applewood Smoked Bacon - Cooked crispy and Crumbled
1/2 cup Packed Brown Sugar
1/4 cup Light Corn Syrup
1/4 Tbsp Cayenne Powder or Chipotle Powder
2Tbsp Bourbon (Optional)
Cooking Spray
Tin Foil Rimmed Cookie Pans
Large Bowl

Directions: 

  1. Heat oven to 300°. Line two rimmed cookie pans with foil, spray with cooking spray.

  2. In a large bowl combine snack mix, pecans and bacon.

  3. In a 2 quart sauce pan, heat brown sugar, butter and corn syrup over medium-low heat, stirring occasionally until bubbly around edges. Cook 5 more minutes, stirring occasionally. Remove from heat. Cool 2 minutes.

  4. Carefully stir in bourbon and cayenne. Pour over snack mixture. Toss until evenly coated.

  5. Spread snack mixture on pans. Bake 15 minutes, stirring every 5 minutes to caramelize the mixture. Cool completely about an hour, stirring every 15 minutes to break up pieces.
